Our Practices

We respect that the way we produce, distribute, and consume food directly impacts our ecosystem. We are committed to measuring our environmental impact, growing our knowledge, and implementing ever-greener systems.

    • Our menus are crafted to highlight the best flavors of each season. We work hard to source from local, sustainable, and biodiverse operations within our regional foodshed, carefully prioritizing suppliers who are aligned with our values.

    • Nearly everything we serve is made from scratch, using all parts of every ingredient to reduce waste.

    • We package, distribute, and serve food using reusable and compostable materials everywhere possible.

    • We sort our waste streams meticulously, diverting everything we can to both traditional and cutting-edge forms of compost and recycling.

Our Community

We acknowledge that our kitchen operates on unceded land originally stewarded by Indigenous peoples, including the Lenape.

We see our resources as part of interconnected local and global communities. We believe food access, security, and sovereignty are human rights so we strive to make our own food accessible by supporting regenerative, community-controlled food systems and partnering with grassroots organizations advancing food justice.
